Ingredients
- 1 pack NOMI Base Protein (prepared, drained)
- 1 large low-carb tortilla (Mission Carb Balance 1g net carb or Xtreme Wellness)
- 4oz grilled chicken breast, sliced
- 2 scrambled eggs
- 1/4 cup shredded Mexican cheese blend
- 1/4 avocado, sliced
- 2 tbsp sour cream or Greek yogurt
- Shredded lettuce
- Pico de gallo (fresh, low-carb)
- Jalapeño slices
- Hot sauce
- Cilantro
Instructions
- Prepare NOMI noodles (6 minutes). Drain completely and let cool for 2 minutes. Must be drained or will soak tortilla.
- While NOMI cooks: grill chicken breast and scramble 2 eggs in separate pan.
- Warm low-carb tortilla (10 seconds microwave or 30 seconds on griddle).
- Lay out assembly: tortilla flat on surface. Spread drained NOMI noodles horizontally across center of tortilla.
- Layer scrambled eggs on NOMI base, then add sliced grilled chicken.
- Add shredded cheese (will melt from hot ingredients), lettuce, pico de gallo, avocado slices, sour cream, jalapeños.
- Fold left and right sides in (about 2 inches each). Fold bottom up over fillings. Roll tightly forward keeping sides tucked. Final seam should be on bottom.
- Optional: Toast wrapped burrito seam-side-down in pan (30 seconds) to seal.
- Slice diagonally in half for cross-section reveal. Serve immediately.
