The story
Black Garlic
The richest bowl I ever loved was in Taiwan: a broth that had been going since morning, greens on top, black garlic oil stirred in last until it shone. This is that bowl in five minutes. Garlic, soy, ginger, pepper, cabbage and bok choy. Stir the oil in last. Savor it.
Ramen rebuilt for real life.
I started NOMI in a convenience store at 2am, holding the cup of instant ramen I loved, the one that got me through the night and kept me at 312 pounds. I tracked every meal, all the way down to 178. I never stopped missing that warmth. So I rebuilt it: 32g of protein in the noodle, air-dried, never fried, ready in five minutes. Same comfort. No crash.

The richest bowl I have ever eaten was in Taiwan. Not in a restaurant with a name I could give you. A small place with a pot that had been going since morning, a broth so dark and glossy it coated the spoon, a soft cabbage leaf and a few greens sitting on top, and a spoonful of black garlic oil dropped in at the very end, so the whole surface bloomed. I sat there longer than I needed to. I went back on every visit, the way you go back to see a friend. Every trip home from that bowl, the cup on the shelf tasted like water.
Black Garlic is my try at getting that bowl into five minutes. Black garlic isn't a different plant. It's ordinary garlic held at low heat for weeks until it turns dark, soft and almost sweet, with the sharpness gone and something deeper and kinder left in its place. Nothing is added. It just takes time, and it's what gives a Taiwanese broth that depth you can't get from salt alone. The broth here is built on garlic, soy sauce, ginger and black pepper, with a touch of coconut for body, plus napa cabbage and bok choy, the vegetables that were actually in the bowl. Then the packet. Stir in the black garlic oil last and watch the cup go dark and glossy, the way the pot did. That's the moment. That's the one I wanted to give you.
Beef is where I started. Curry is my favorite. Black Garlic is the one I'd serve you if you came to my house, because it's the closest I've come to a bowl I still think about with real affection. 32 grams of protein in the noodle so it holds you up like the real one did.

Reviews
“Completely blew me away. The broth was so rich and savory that I couldn’t tell the difference from traditional options, and this actually delivers a solid hit of protein.”

“I LOVE the macros. I eat over 200g of protein a day and this helps me get there without eating meat at every meal. The spice is just right.”
Verified buyer
“Similar to a soba texture but with more bounce, like traditional ramen. Savory and not too salty. Definitely will be buying another box.”
