Ingredients
- 1 pack NOMI Kimchi Heat (prepared, drained, cooled)
- 1 sheet nori seaweed (sushi-grade)
- 4oz Korean BBQ beef (bulgogi style)
- 1/4 cup kimchi, chopped and drained
- 2 scrambled eggs
- 1/4 avocado, sliced
- 2 tbsp sriracha mayo
- 1 tsp toasted sesame seeds
- Bamboo sushi mat (optional but helpful)
Instructions
- Prepare NOMI Kimchi Heat (6 minutes). Drain completely and let cool for 2 minutes. Must be cool to touch.
- While noodles cool, cook Korean BBQ beef over high heat until caramelized. Scramble 2 eggs separately.
- Lay nori sheet shiny-side down on bamboo mat or clean surface.
- Spread cooled NOMI noodles across bottom half of nori sheet, leaving 1 inch border at bottom edge.
- Layer fillings horizontally: scrambled eggs, bulgogi beef, chopped kimchi, avocado slices.
- Drizzle sriracha mayo across fillings in thin line.
- Starting from filled end, roll tightly forward using mat to guide. Apply pressure to keep roll tight.
- Seal edge with water. Let rest seam-side down 1 minute.
- Slice diagonal with sharp wet knife. Garnish with sesame seeds. Serve immediately.
