Ingredients

  • 1 pack NOMI Kimchi Heat (prepared, drained, cooled)
  • 1 sheet nori seaweed (sushi-grade)
  • 4oz Korean BBQ beef (bulgogi style)
  • 1/4 cup kimchi, chopped and drained
  • 2 scrambled eggs
  • 1/4 avocado, sliced
  • 2 tbsp sriracha mayo
  • 1 tsp toasted sesame seeds
  • Bamboo sushi mat (optional but helpful)

Instructions

  1. Prepare NOMI Kimchi Heat (6 minutes). Drain completely and let cool for 2 minutes. Must be cool to touch.
  2. While noodles cool, cook Korean BBQ beef over high heat until caramelized. Scramble 2 eggs separately.
  3. Lay nori sheet shiny-side down on bamboo mat or clean surface.
  4. Spread cooled NOMI noodles across bottom half of nori sheet, leaving 1 inch border at bottom edge.
  5. Layer fillings horizontally: scrambled eggs, bulgogi beef, chopped kimchi, avocado slices.
  6. Drizzle sriracha mayo across fillings in thin line.
  7. Starting from filled end, roll tightly forward using mat to guide. Apply pressure to keep roll tight.
  8. Seal edge with water. Let rest seam-side down 1 minute.
  9. Slice diagonal with sharp wet knife. Garnish with sesame seeds. Serve immediately.
