Conventional instant noodles are built on flash-fried starch and synthetic seasoning. The fog that follows the bowl isn't accidental — it's engineered in. NOMI rebuilt from the noodle up.

  • 01. Air-Dried Architecture

    Flash-frying takes minutes and deposits 14–20% fat into the noodle. Air-drying takes 12 hours and produces a cleaner base. The industry uses flash-frying because the economics favor it. NOMI uses air-drying because the standard requires it.

  • 02. Protein in the Noodle

    30–32g per cup. Built into the noodle base — not dissolved in a seasoning packet. The difference isn't just where the number comes from. It's how the meal holds, how long the satiety lasts, and whether the bowl earns a second day.

  • 03. Botanical Broth

    Garlic, ginger, chili, and layered spice selected for depth and daily function. A broth engineered to stand on its own — not to compensate for a noodle that can't.
